It’s hard to try and understand how nightshade vegetables are harmful when taste so good :|
Cucumbers, when pickled, are also de-lectinized.
Tomatoes are great if you eat them traditionally, in that you remove the lectin-bearing seeds and skin. Voilah, good for you. Or you pressure cook them, that also de-lectins them.
